Courgettes with Cheese and Miso

This is SO easy, and SO delicious!

This time I made it with a big, yellow UFO-shaped courgette that you see sometimes in Japan nowadays – I wonder what its called in the UK? But the recipe works great with normal courgettes, too.


Courgettes (zucchini)

Cheese (cheddar or similar)


1. Cut the courgettes into slices, spread thinly with miso and top with cheese.

2. Bake in 200˚C oven until the cheese begins to brown, and you’re done. Can’t get much easier than that!

(You could do the same thing in a frying pan with a lid, on a low heat, too)
